As a vegetarian (Iam not a vegan but I do not eat any animal protein) I find it hard to give up most baked goods and deserts. I was delighted to find this recipie but have made some modifications to suit my family’s taste.If you do not enjoy lady Fingers try using day old eggless cake sliced
32 ounces frozen mixed berries
1 cup superfine sugar, divided
48 lady fingers
juice of 1/2 a lime, plus zest
2 tablespoons slivered sliced almonds, toasted
1 cup heavy whipping cream
1 lb Room temperature Marscapone Cheese
2 teaspoons pure Vanilla extract
1/2 teaspoon cinnamon powder
2 tablespoons sweet Marsala (optional)
1 lb fresh mixed berries( raspberries, blueberries, black berries and strawberries)
Combine frozen berries and half of the sugarin a mediunm sauce pan. Cook over med -low heat for 10-15 minutes, stirring frequently. Cool to room temperature.
stir in the lime juice .
Whip the heavy cream till soft peaks, add the sugar and keep whipping, add the marscapone and stir to combine. Add the cinnamon, the zest and the marsala. Stir to combine.
Place the lady fingers in a glass dish and pour half the berry syrup to soak the fingers.
Pour on half of the marscapone mixture.Repeat this proceedure over ending with the Marcapone mixture. Sprinkle on the fresh berries and toasted slivered almonds.
Refridgerate for at least 6 hours or better still overnight. Serve chilled
