Chinese Style Hainese Chicken with two sauces


1 Chicken , about 3 1/2 lbs

In a tall pot place chicken with cold water to come up about half way. Bring to simmer and cook for about 30 minutes till done (may require furthur cooking time, check for doness.             When done the chicken will register 180 degrees .Remove chicken and drain. Bone and Shred the chicken .Arrange on a serving platter.

 

Guai -Wei sauce

1 tablespoon ginger Juice

1 tablespoon finely chopped Garlic

2 tablespoons finely chopped Scallions

1/4 tsp freshly ground Sichuan pepper(available at Asian grocery stores)

1 1/2 tablespoon sugar

3 tablespoons Soy Sauce

1 tablespoon Rice Vinegar

2 tablespoons Chilli Oil

1 teaspoon Sesame Oil

1 teaspoon sesame Paste

Combine all ingredients in a ceramic bowl. Pour over Chicken just before serving.

 

Jiao Ma Sauce

1/4 cup finely chopped scallions

2 tablespoons sugar

1 1/2 teaspoons finely ground Sichuan pepper

1/4 cup home made or store bought Low Sodium Chicken stock

1/4 cup soy Sauce

2 tablespoons sesame oil

Combine in a ceramic bowl and pour over chicken just before serving

Garnish with sprigs of Cilantro and Cucumber sticks
