Chicken coctail Koftas (Meatballs)


Thease delicious morsels are super for coctail parties as they can be made ahead of time to allow their favors to really come together. This recipie comes from Mridula Baljekar.

2 slices sandwich bread, crusts removed

3/4 cup milk

1 lb ground chicken

2 tablespoons heavy cream

2 tablespoons chopped cilantro3 large garlic cloves, crushed

1-2 geen chillis, seeded, chopped

1″ piece ginger, grated

1 teaspoon ground cumin

1 teaspoon garam masala

1 teaspoon salt

1/2 teaspoon chili powder

2 tablespoon gram flour(besan) or corn starch

Vegetable oil for frying

Soak the bread in milk for 2-3 minutes. Squeeze out all the milk and place milk soaked bread in a food processor. along with the rest of the ingredients except gram flour and oil. Blend till smooth. Transfer to a bowl , cover and chill at least 1 hour.

Heat enough oil in a wok for deep frying. Make small, marble sized balls from the chilled chicken mixture and roll them lightly in the gram flour. Fry the Koftas in a single later over medium heat until browned. Drain on absorbent paper towel. Serve hot with your favorite chutney.
