I have never been a fan of Guacamole till I was treated to this made fresh, table side , at Rosa Mexicano in NYC. It was unbelievably fresh and chunky, not baby food. Try this, its from THE ROSA MEXICANO book and I wouldn’t change a thing!!!

3 tablespoons chopped white onion

1/2 teaspoon chopped serrano chilies

1 1/2 teaspoon finely chopped cilantro

1/2 teaspoon salt

1 ripe Hass avocado

1 small vine- ripened sliced in half,horizontally. Cut out the stem, scoop out the seedsand center with a spoon and chop.

.In a small bowl,throughly mash 1 tablespoon chopped onion,the serrano chilies,1/2 tsp cilantro and salt with the back of a wooden spoon until it is a juicy paste.

 Place the pitted , skinned avocado in the bowl with the paste

Stir throughly to coat with paste.

Add remaining onion, cilantro, and the tomato. Gently fold to incorporate. Add more serrano chilli and salt to taste

Serve with freshly made tortilla chips or corn tortillas.
