Amazing almond Thumbprint cookies

During the holidays I love to bake and bake and bake . Cookies are my all time favorite gifts to give and so personal ,they tell the recipient that you not only thought of them but took the time for them . There are tons of recipes for Thumbprints ,so I compliled my own . I love the red of raspberry or strawberry jam filling and for crunch ,I like to roll the cookies in chopped ,blached almonds prior to filling and baking.

2 sticks room temperature unsalted butter (1 cup or 8 oz )

1/3 cup white sugar

1/3 cup light brown sugar

2 cups all purpose flour

1/4 tsp almond extract

1 tsp vanilla extract

Jam for filling

1/4 cup blached almonds ,finely chopped

Preheat oven to 325*F.

Cream butter and both sugars till smooth and just mixed. Stir in both extracts. Stir in flour until dough just comes together.

Roll dough into 1 inch balls and roll in chopped almonds. Place on ungreased cookie sheets leaving enough room for the dough to spread. Use the back of a wooden spoon and make a hole in the center of each cookie ,making sure not to pierce all the way through. Usind a  1/4 tsp measuring spoon ,fill each hole with your choice of jam.

Bake for 15 -16 minutes ,till cookies are a pale golden brown.

Place tray on cooling rack and allow the cookies to cool completely.
