Spicy Black bean sauce Noodles


I must confess my love for these noodles. Black beans paired with garlic and chilis sends an aroma wafting through the home like no other. Chef Hom who created this recipe envisioned them with cold noodles , which is delicious, but my personal preferance is to toss the sauce ,hot with the noodles and enjoy a side dish of steamed bok choy along side to cut the saltiness of the black beans. Hot or cold do not miss out on this delicious dish.

3/4 lb fresh or dried chinese noodles

SAUCE

3 TBS peanut oil

2 TBS yellow bean sauce  (I concider this as optional)

2 Tbs black beans ,coarsely chopped

2 TBS finely chopped garlic

1 TBS finely chopped ginger

2 TBS finely chopped scallions

2 TSP chili bean sauce

2 Tsp sugar

1 TBS dark soy sauce

2 tsp chili oil

2 tbs rice wine or dry sherry

5 oz vegetable stock

1 tsp cornstarch mixed with 1 tsp water

Cook noodles according to package directions ,drain and set aside .

Heat a wok till moderately hot. Add oil  ,yellow bean sauce ,black beans, garlic ,ginger, and scallions and stir fry for 2 minutes. Then add all the other ingredients except for the cornstarch mixture and continue to cook for a furthur 2 minutes. Stir in the blended cornstarch and boil for 30 seconds. Remove from heat and allow the sauce to cool before stirring with the noodles. Serve at once.

Borani, Iranian cold spinach and yoghurt dip


I love the combination of Spinach and Yoghurt. In an ideal world the yoghurt would be homemade, of course, but honestly I use Stoneyfield farm, Whole Milk or Low fat work well. This is great served both as a dip or even a light lunch.

1 Bunch fresh spinach, trimmed and cleaned(I love Baby Spinach for this)

2 tablespoons fresh lemon juice

1 Tablespoon finely chopped red onion

salt and freshly gound black pepper

1 cup plain yoghurt

1 tablespoon chopped mint

1/2 teaspoon ground cumin

Cook spinach with a little water. Drain, Cool and squeeze out excess water.Chop as finely as possible.

In a bowl combine spinach, lemon juice, onion, salt and pepper.Toss  and add yoghurt. Mix throughly.

Refridgerate at least 1 hour. Transfer to a serving bowl and sprinkle with cumin and mint.

Thai Chicken spinach salad


This cold chicken salad is often served as an appetizer in many Vietnamese restaurants and homes. It is a refreshing crunchy sald and great as a  side dish to any meal.

1 rotisserie chicken boned and shredded or i home steamed chicken

3 tablespoons Fish sauce * ( I love 3 crab brand)

11/ tablespoons Rice vinegar*

11/2 tablespoons sugar,*

2 tablespoons Frsh lime juice

  Palm sugar is best but white is a fine substitute

coarse dea salt to taste

2 small carrots, grated

1 medium red onion , thinly sliced

2 cloves garlic minced

1″ piece ginger thinly sliced

2 red chilis seeded and sliced, or to taste

1/2 cup chopped cilantro

chopped roasted peanuts1/4 cup frsh bean sprouts(optional)

3 cups fresh raw spinach

Whisk together Vinegar,lime juice, sugar and fish sauce and half the cilantro

Toss the spinach , carrot, onion, garlic, ginger and chilli.

Toss the chicken with the other half of the cilantro

20 minutes prior to serving toss the spinach mixture with the fish sauce dressing, place in a nice elongated serving plate.

Top the salad with the cilantro chicken, sprinkle on the bean sprouts, if using and sprinkle on peanuts.

Mango Banana Smoothie


Love this refreshing smoothie especially in the scorching summer months. This and a salad make a super , filling meal any time of day.

Serves 2

2 mangoes, peeled , diced, and frozen

1 cup plain yoghurt, preferably Stonyfield

1/2 cup skim milk

1 Banana, coarsly chopped and frozen

2 -3 tablespoons fresh lime juice

Place all ingredients in a blender and whip till smooth. Pour into two tall glasses and garnish with a sprig of mint.

Mango Smoothie

1 Ripe Mango ,Peeled and cubed

1/4 cup pineapple juice

Juice of half a lime

2 tablespoons Heavy Whipping Cream

Ice

1 tablespoon Greanadine

Blend all ingredients till smooth in a blender except the grenadine.

Spoon the grenadine into a tall glass and pour mango smoothie over

Enjoy
