Buttermilk -Lemon Sorbet with Cardamon and Rose Water

Confession time,I have not met a dessert I have not loved,but I know better. I must admit another one of my passions is the taste and aroma of Cardamon and Rose water so,when I found this recipe I thought ,perfection out of my freezer.And…Buttermilk is low in fat and oh so good for you.

serves 6

10 Cardamon pods

11/2 cups water

1 cup water

5 cups Buttermilk

1 tablespoon finely grated Lemon peel

11/4 cups freshly squeezed Lemon juice

2 teaspoons Rose Water

pinch of salt

Combine cardamon and sugar with water in a medium saucepan over medium -high heat. Bring to a boil;then lower heat slightly and boil for 5 minutes. Remove from heat and allow to stand to room temperature. Strain the syrup,discarding the cardamon pods.

Combine the syrup with the buttermilk,lemon rind ,lemon juice, Rose water and salt. Place in an ice cream maker and freeze according to manufacturer’s directions. When sorbet is done,transfer it to a freezer container with a tight -fitting lid. Freeze for about 3 hours before serving.


Red Wine sorbet with Fresh Raspberries

This recipie comes from Leslie Forbes. It serves4-6 .I have modified it to my liking,hope you enjoy it too.

1 pint Fizzy red wine or White

1/2lb red Raspberries

1/2 cup superfine sugar

5-6 Fresh mint leaves, more for garnish

Rind of half an orange

Boil wine, sugar and mint leaves together till sugar is dissolved. Add Raspberries and allow to marinade at least 1 hour.

Remove the mint and put mixture into a food processor with the orange rind . Blend         Place in a freezer safe dish and freeze 3 hours, srirring frequently to prevent the formation of ice crystals.

Serve with more mint, dipped in sugar and water then frozen (use as a garnish)

Mango sorbet

I tried this recipie by David Rosengarten without much confidence it would work. 4 simple ingredients!! then it hit me how fresh and true to the fruit this was, wow!!

serves 4

1 Mango peeled and pitted

1/2 cup sugar( I use super fine sugar, or process in the food processor a few seconds)

1 tablespoon fresh lemon juice

pinch salt

Puree Mango flesh in a food processor

In a bowl mix the puree with 1 cup of Hot water, the sugar, lemon juice and salt. Taste, more sugar may be added , if desired.

Place bowl in refridgerator to chill

Put the chilled puree in an ice cream maker and freeze following manufactures directions
